Some customers complained that the colors are irregular from order to order of our Canned Kidney Beans. Some of them are dark, others are light.Also there are other customers asked: “Where have gone the freckles of the speckled beans?” Normally I would perfunctorily answer: “It is because the raw materials are different according to each order. “
No more explanations then. Then I did an experiment as follows to explain why there are differences of the colors:
I got two batches of samples from the raw material suppliers. The left is stocks from 2015 and the right is new harvest from 2016.From the first glance, we can find that the old speckled kidney beans are darker.
Then we soak them 12 hours in water. Comparing with the dried beans, the soaked beans are larger and the freckles are disappearing. Actually in the real production procedure, the soaked beans will be even larger.
After stewing for 10 minutes, the freckles are gone totally and the color differences are more obvious. This experiment has simply simulated the canned food production procedure and from which we could know that:
The color will be darker with old raw materials while lighter with the fresh materials.
As the batch of the raw materials are different, we can not ensure that all raw materials to be new or old. We could simply try to reduce the difference of the colors.
Finally, in the sea transportation, the colors of the beans will change a bit too.
